Menu Planning Monday week of December 29th



Last week we did not do well sticking to our menu. Leftovers ended up being on the menu more than once as well as quick substitutions to accommodate our busyness. We should do better this week. Menu Planning Monday certainly does make shopping a whole lot easier! Well...that and having hubby off so I could go shopping without the my little angles!

Monday- Cream of Broccoli Cheddar soup and salad
Tuesday- Chicken Tacos and salad
Wednesday- Homemade pizza
Thursday- Shrimp Fettuccine and garlic bread
Friday- Chili and cornbread
Saturday- Homemade chicken noodle soup and homemade bread
Sunady- French-Toast-Strata

Cream of Broccoli Cheddar Soup from Saving Dinner
1 tablespoon olive oil
1 onion, chopped
1 bag frozen chopped broccoli (used fresh)
2 cups chicken broth
1-1/2 cups mashed potatoes (used instant)
2 cups milk
1-1/2 cups cheddar cheese, shredded
salt and pepper to taste

In a soup pot, heat olive oil over medium-high heat and cook onion. When onions are translucent, add broccoli and chicken broth. Cook till broccoli is tender, about 3 minutes or so.
Add mashed potatoes, mixing well till incorporated. Heat for 5 minutes, then add milk and heat a little while longer. Add cheddar cheese and stir; salt and pepper to taste.

It was pretty good but I thought it was a little bland. The two little ones didn't eat it but they don't normally. The older 2 really liked it and had seconds.
