
This week is posing some problems for me. I hurt my back yesterday and at this point I'm taking it easy. I do not want to prolong my back pain by over doing it. Hopefully I will be able to either make dinner, instruct Maddy with basic meals she can cook or wait for hubby to get home. Not my idea of fun.
I made a roast chicken on Friday that we had for dinner. That night I took all the meat off the bone and made stock with it that I threw in the freezer. Last night I used the left over chicken to make tacos. There wasn't a lot of meat so seasoned it with seasonings and salsa and added rice but I made too much rice and we now have lots of leftovers again. See a pattern here. The mixture reminded me of a casserole we used to make when my husband I were first married. Tonight I'm going to throw cheese in the rice mixture and heat up and then we will put French's fried onions on top and cook it a little longer.
Monday: Leftovers from the roast chicken and tacos we had over the weekend and salad. How's that for stretching a whole 5lb + chicken out to 3 meals?
Tuesday: Crock pot Italian chicken and potatoes.
Wednesday: Tuna noodle casserole
Thursday: Corn chowder and sour dough biscuits from Little House on the Prairie cookbook or sour dough bread. (I hope I didn't kill the starter)
Friday: Ravioli Casserole
Saturday:Dare I say it's my birthday? Well it is! We have a gift certificate we were given for Christmas so we will use it to buy pizza and wings for everyone. I'm sure there will be cake or some type of dessert because I love sweets!
Sunday: Homemade macaroni and cheese with ham and steamed veggies.
